Malaga, Spain is located on the coast of the Mediterranean sea.  It does not get much rain, but the temperatures can get up into the 80s.  One of the ways that people in Malaga stay cool is by eating cooling foods if they live in this region of Spain.  The Andalusia region of Spain is credited with inventing Gazpacho!  Gazpacho is a cold tomato soup.  It is made with several ingredients such as tomatoes, cucumbers, peppers, onions, and garlic.  Click on the image below to try this Easy Gazpacho that you make in a blender.  No cooking required!

Do not have all of the ingredients for Gazpacho?  Not a problem.  This same region also developed a recipe for a cold tomato soup just using tomatoes and bread.  it is called Salmarejo.  It is often topped with ham when it is served.  Click on the image below to try this version of cooling tomato soup.
