About French Cuisine

French cuisine consists of the cooking traditions and practices from France.  It developed over many centuries and was influenced by the surrounding cultures of Spain, Italy, Switzerland, Germany, and Belgium and by its own food traditions.  French cooking knowledge has contributed greatly to Western cuisines such as that of the United States.  French cooking also relies on fresh ingredients.

 

 

 

 

 

 

 

Breakfast in France is called le petit dejeuner and is usually a quick meal of slices of French Bread (tartine) with butter and honey or jam.  This is accompanied by black coffee (cafe) or coffee with cream (cafe au lait) or tea.  Children often get to have hot chocolate with their breakfast!

 

 

 

 

 

 

 

 

 

 

Lunch in France is called le dejeuner.  It is a complete meal that can last from 1 hour in the middle of the day or up to 2 hours in smaller towns. 

 

 

 

 

 

 

 

 

 

 

 

 

 

Dinner or le diner often consists of 3 courses.  The first course is called the d'oeuvre or entree and consists of appetizers, an introductory course, or sometimes soup.  The second course is called the plat principal and is the main course of the meal and is served with vegetables along with potatoes, rice, or pasta.  The third course is a cheese course or dessert.  Sometimes a salad is offered before the third course.  Yogurt may replace the cheese course and an example of a simple dessert would be fresh fruit.  The meal is often accompanied by bread and most of the time the bread would be a baguette which is baked daily.

 

Julia Child

Julia Child was an American cooking teacher, author, and television personality.  She is recognized for bringing French cuisine to the American public through her cookbook Mastering the Art of French Cooking.  Her techniques were shared with the public through her public television shows.  Take a look at some of her recorded programs!
