Beans for Frugal Meals

Easter Weekend is coming this week!  Our cafeteria will be open with limited hours so you may get hungry between meals.  A great and inexpensive option is to create some meals with canned beans.  They are cheap, are a great source of protein, fiber, iron, and vitamins, and can be used in many dishes.

One of the best sites that I have found for recipes is the Bush Beans site! It has given me a ton of recipes ideas for sandwiches, salads, baked potato toppings, pasta, and soup.  This past week I made the "Rustic Tuscany Chickpea Orzo Salad".  It was cheap and amazing!  If you walk down the aisle with beans at the grocery store you will see many types:

  • Black Beans
  • Navy Beans
  • Cannellini Beans
  • Kidney Beans
  • Pinto Beans
  • Garbanzo Beans
  • Cranberry Beans
  • Lentils

You get the idea.

As I looked through the list of recipes, my favorite idea for this weekend was a Walking Taco.  I have seen them at festivals in a small bag of corn chips with a little bit of chili, some cheese, and maybe lettuce or sour cream.  That is it.  You put it all in the 1 oz chips bag and you can walk around while you eat it.  Cute and expensive.  You can actually make a much larger serving in a bowl for more than one meal.  Each meal would cost you about $3.99 at its most basic and would increase depending on how many toppings you add.

1 can Armour chili - $2.49

1 12 oz bag Herr's Bite Size Dippers - $2.99

Cheese (2/$5) and Sour Cream (2/$5) are also on sale this week if you want to add them.
