Potatoes!

It is October and that means harvest time!  This is a great time to look for sales on fresh fruits and vegetables.  Locally, our grocery store across from campus, Ralph's Food Fair, has had potatoes on sale for the past 3 weeks.  This week large roasting potatoes are on sale for $.58/lb.  That is about 2 potatoes for a little over $1!  So how many ways can you fix a potato?  There are a lot!

Potatoes, according to the Potatoes USA site (https://potatogoodness.com/nutrition/), are an excellent source of vitamin C, have more potassium than a banana, contain vitamin B6, up to 2g of fiber, and 3g of protein in a 5 ounce potato.  Add to that, they are fat, sodium, cholesterol, and gluten free.  They are also neutral in flavor so you can add both savory and sweet toppings.  They can also be prepared in a variety of ways!

Two easy ways to prepare potatoes is to either boil them or bake them.  You can use different tools to accomplish that.  In the dorm, we suggest using an electric kettle or a microwave oven, both legal dorm appliances.  Once your potatoes are cooked, there are numerous topping combinations to try.  Here are a few suggestions to get you started:

  • Pizza - pizza sauce, pepperoni, mozzarella cheese
  • Taco - Black beans, salsa, cheddar cheese, and sour cream
  • Chili - 1 can prepared chili and cheddar cheese
  • Broccoli Cheese - velveeta or American cheese and thawed frozen broccoli
  • Mushroom - 1 jar mushrooms and 1 envelope brown or mushroom gravy
  • Mediterranean - Garbanzo beans, roasted red peppers, feta cheese

Just want something basic?  Butter and salt and pepper will also work and fill you up.
